The Siphon is the only brewing method that was invented by scientists and adopted by showmen.
It was developed in the 1830s, simultaneously in Germany and France, by chemists working with laboratory vacuum equipment. The operating principle is thermodynamic: heat the lower chamber, vapour pressure pushes water up through the grounds in the upper chamber, remove the heat, atmospheric pressure pulls the brewed coffee back down through a filter into the lower chamber.
This is not brewing. This is physics.
